Coffee Shop Fudge

- 1 cup chopped pecans
- 18 ounces semi-sweet chocolate chips
- 1 (14 ounce) can sweetened condensed milk
- 2 tablespoons strong brewed coffee (room temperature)
- 1 teaspoon ground cinnamon
- 1⁄8 teaspoon salt
- 1 teaspoon vanilla extract
directions
- Line an 8" square pan with foil. Butter the foil and set aside.
- Place pecans in a microwave-safe pie plate. Microwave, uncovered, on high for 4 minutes, stirring every minute; set aside.
- In a 2 quart microwave safe bowl, combine chocolate chips, milk, coffee, cinnamon, and salt.
- Microwave, uncovered, on high for 1 1/2 minutes, and stir until smooth.
- Stir in vanilla and pecans.
- Immediately spread into the prepared pan.
- Cover and refrigerate until firm, about 2 hours.
- Remove from pan; cut into 1" squares.
- Cover and store at room temperature.

I have made this recipe for years, since it first was published in the TOH Christmas edition. In case anyone is curious; it's easily adapted to a stove top recipe and doubles nicely. Combine the chocolate chips and condensed milk and melt slowly on med-low, stirring often. Once melted, add the vanilla, pecans and coffee. We aren't fans of the cinnamon in this recipe, so I throw in a teaspoon or two of the Epicure Pumpkin Cheesecake mix instead. I also add a couple teaspoons of Kahlua right before I pour it into the pan. This is definitely the easiest fudge recipe I have ever made, and bonus, it's also a no fail one.

Oh this is very good and easy to make. I love when I can actually make fudge that doesn't turn out all gritty. I used Snickerdoodle flavored coffee, so some of the flavor came through in the fudge. Even more cinnamon is a good thing. I put half of the batch in the freezer for later ;) and half of the batch went on my Christmas trays.
