Clay Oven-Roasted Chicken

Don't see too many clay oven or clay pot recipes. This is a favorite of mine. It makes a chicken with a golden brown, very crisp skin.

This is my first Clay Baker recipe and it is awesome! It was a big hit with the whole family. It was moist and crispy. I threw 4 pealed garlic cloves in the pot. The roasted cloves were wonderful mushed in the rice I served with it.

I love chicken cooked in a clay pot, and this one is tasty and easy! I added some lemon slices to the bottom of the pot before placing the chicken in the pot. Just gave it a little extra lemon flavor. I think I will add some sliced onion next time. Thanks for posting!

Great chicken and so easy! I made this as written but used thyme instead of tarragon. The chicken was perfect following the times and temperature...it stayed moist and juicy on the inside, nice and crisp outside. Thanks Al for posting this....I'll be making this again for sure.
