Chunky Veggie and Barley Soup (Crock Pot)

ingredients
- 3⁄4 cup pearl barley
- 6 cups chicken stock
- 2 cups leeks, cut in half and roughly sliced
- 1 cup carrot, roughly chopped
- 1 cup celery, roughly chopped
- 1 cup button mushroom, sliced
- 1 cup frozen corn
- 1⁄2 cup frozen peas
- 1 teaspoon herbes de provence
- 1⁄2 teaspoon garlic powder
- 1 teaspoon dried onion flakes
- 1 bay leaf
directions
- Throw everything into your crockpot and cook on low for 6 to 7 hours.
- The longer you cook it the thicker the soup will get as the barley.
- will soak up the liquid so if you are home just keep an eye on it now.
- and then to see if it is getting too thick for your liking.

I liked all the veggies in this soup. I thought that it was done cooking after 3-3 1/2 hours on low. I stopped cooking after this amount of time so the veggies didn't disintegrate. The soup kept some of the flavor of the herbes de provence and the leeks but it could have benefited from some form of salt to bring out the flavors. I used Swanson's new Chicken Stock so the soup needs more salt even over that to carry the barley and all the veggies. Overall, had the right amount of veggies to barley to liquid and is a good crockpot recipe to play with.

This was the first Craze-E Contest recipe I made. I was slightly disappointed in the flavor & felt it was lacking, but I was very drawn to a veggie soup. The herbs de preovance were strangely out of place for me with nothing else to support them. I have decided the problem must have been the broth I used (purchased) as there wasn't much other than a watery flavor so I am assigning no stars. The only change I made was to sub 1/2 cup green beans for half of the corn. Thank you for your contest entry!

This was such a tasty soup. It's hard to please everyone in my family, but everyone seemed to really like this wonderful soup, which is just packed with healthy vegetables. It has a very savory taste, and is such a no-fuss, no-muss dish. The perfect meal to warm up with in the evening on a cold, rainy day. Yummy!
