Chocolate Cherry Cake

"I'm not sure where my mom got this recipe, but everyone in my family requests it for their birthday. I don't even care for chocolate, but this cake is absolutely fab!! I think it's the icing that makes it so great. Gotta try it!!! (Not sure about the prep. time...depends on the baking time for the cake) Make the pie filling in the shape of a heart for a great Valentine's Day cake."

  • 18 ounces chocolate cake mix (baked in two 9-inch round cake pans) or 18 ounces devil's food cake mix (baked in two 9-inch round cake pans)
  • 3 eggs (or as called for by your cake mix)
  • 13 cup oil (or as called for by your cake mix)
  • 1 13 cups water (or as called for by your cake mix)
  • 1 (3 ounce) package instant chocolate pudding mix
  • 2 (1 1/2 ounce) envelopes dessert topping (Dream Whip)
  • 1 14 cups cold milk
  • 1 (20 ounce) can cherry pie filling

directions

  • Prepare cake layers according to pkg directions.
  • In small bowl, combine pudding mix, topping mixes, and milk.
  • Beat with electric mixer at medium speed until stiff, about 2-3 minutes.
  • Place one cake layer, flat side down, on serving plate.
  • With pudding mixture, make a ring about 1/2 in high and 1 in wide on top of cake layer.
  • Place half of cherry pie filling in center of cake.
  • Place second cake on top, flat side down.
  • Repeat with pudding mixture and remaining cherries on top of second layer, reserving enough pudding mixture to cover sides of cake.
  • Frost sides of cake with pudding mixture.
  • Refrigerate until serving.

  1. This was delicious. I made it for a party and every morsel vanished within 10 minutes. The recipe does not specify what size pudding mix to use. I used a large box and it was very good, however, I think a small box would be best. The pudding mixture stiffened up too quickly and was a bit difficult to spread. The flavor was very good, though.
     
  2. I love cherries and chocolate and this easy-to-make cake pulls them together with a yummy creamy frosting! Delicious! I used a Duncan Hines deep chocolate cake mix and lite cherry pie filling. The light chocolate frosting with the dark cake and cherries makes a great presentation. With the milk content, I figured that the leftovers should be refrigerated, and, bonus, it was still nice and moist the next day.
     
  3. This is very good and easy to make. I lightened the recipe by using skim milk and fat free/sugar free pudding mix and lite cherry pie filling. A definite keeper!
