- 1⁄2 cup heavy cream
- 1 1⁄4 cups avocados, peeled seeded, 1/4-inch dice
- 1 cup cucumber, peeled seeded, 1/4-inch dice
- 1 tablespoon lime juice
- 8 ounces chicken stock
- 1 cup plain Greek yogurt
- 1 tablespoon garlic (minced)
- 4 ounces sour cream
- 1 tablespoon dill (rough chop)
- 1 tablespoon parsley (rough chop)
- 1⁄2 tablespoon salt
- 1 teaspoon white pepper
- 2 ounces whole milk
- 1 tablespoon mint (rough chop for garnish)
directions
- Puree heavy cream, avacado, cucumber, lime juice, chicken stock, plain yogurt, garlic, sour cream, dill and parlsey to a fine smooth consistency. Whisk in milk until desired consistency. add salt and pepper. refrigerate for 45 mins, serve in chilled bowls and garnish with mint.
