This is a great recipe, I served it tonight with <a href="/131176">Beef and Bean Burritos</a> and everyone in my family loved this meal. I have to confess that I didn't exactly make it low fat. I used extra sharp cheddar and low fat sour cream. I have this recipe already in my cookbook and will be giving a copy to my mother who really liked it and asked me for it. Thanks for a great recipe.
I made this a day ahead and because of another person's review of a little dryness, I added one can of cream of celery soup to the rice. I also added a little cumin and chili powder and of course, extra cheese! So, the low fat version of this went right out the window. We loved this recipe and will make again.
