- 1⁄2 cup onion, chopped
- 1 lb lean ground beef
- 1 tablespoon extra virgin olive oil
- 8 ounces elbow macaroni
- 1 (16 ounce) can kidney beans, undrained
- 1 (16 ounce) can tomato sauce
- 1 cup water
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1 cup cheddar cheese, shredded
directions
- Brown beef and onion in large skillet, then drain.
- Add macaroni, kidney beans, tomato sauce, water, chili powder, and salt.
- Cover and simmer for 15 minutes.
- Add cheddar cheese.
- Cover and continue to simmer until cheese is melted.
