- 2 lbs kidney beans
- 1 tablespoon olive oil
- 2 cups onions, chopped
- 4 garlic cloves, minced
- 4 slices bacon
- 1 lb ground beef
- 3 tablespoons chili powder
- 1 1⁄2 teaspoons oregano
- 1⁄2 teaspoon hot pepper, crushed
- 1 1⁄2 teaspoons black pepper
- 1 1⁄2 teaspoons cumin
- 1 1⁄2 teaspoons celery seeds
- 6 tomatoes, chopped
- 2 teaspoons sugar
- 1 tablespoon red wine vinegar
- 2 bay leaves
directions
- Fry bacon, remove and chop. Saute onion and garlic in olive oil. Stir in ground beef and cook until brown. Drain fat. Add remaining ingredients and bring to a boil. Reduce heat, cover and simmer until thick (about 1 hour). Thicken with some corn meal mixed with water if neccessary. Remove the bay leaves before serving.
- Serve with bowls of raw chopped Vidalia onions, shredded cheese, and plain boiled macaroni.
