"Great chili recipe that I developed over the years. Not too spicy. Suitable for families with kids. The bacon is a subtle touch that can be omitted, but shouldn't."

  • Fry bacon, remove and chop. Saute onion and garlic in olive oil. Stir in ground beef and cook until brown. Drain fat. Add remaining ingredients and bring to a boil. Reduce heat, cover and simmer until thick (about 1 hour). Thicken with some corn meal mixed with water if neccessary. Remove the bay leaves before serving.
  • Serve with bowls of raw chopped Vidalia onions, shredded cheese, and plain boiled macaroni.
