- 2 cups chickpeas, rinsed and drained
- 1⁄3 cup olive oil
- 1⁄4 cup minced fresh parsley
- 1 lemon, juice of
- 1 teaspoon salt
directions
- Mix all ingredients.
- Chill at least 30 minutes before serving.

This is really good. I added a bit of fresh produce and some fresh mint. I used canned chickpeas, you must use a good olive oil for which I used an unrefined extra virgin olive oil and sea salt for the salt.

Delicious! I'm sure it's great as written, but I played with the ratios because of what I had on hand: an entire bunch of parsley and just a cup of chickpeas. As the other reviewer suggested, good ev olive oil shines in this recipe.

Boy is this really good!!!! I love the flavors. I used a really good premium select extra virgin, first cold press olive oil by Lucini. I think it tastes great with the fresh lemon and parsley!! I threw on a little of the lemon's zest for garnish because I never throw away zest!! Loved this recipe, thanks!!!!!!!
