- 1 lb chicken, Cubed
- 1 green bell pepper, Sliced
- 1 red bell pepper, Sliced
- 1⁄2 onion, Chopped
- 1⁄2 cup mushroom
- 1 tablespoon garlic, Chopped
- 1 (8 ounce) can black olives
- 6 tablespoons extra virgin olive oil
- 5 tablespoons Montreal chicken seasoning
- 1 teaspoon garlic salt
- 1 teaspoon garlic powder
- 2 cups rice
directions
- Put EVOO in pan with cubed chicken, onion, and garlic. Cook over medium heat until chicken is no longer pink. Season with 1/2 Chicken seasoning. While chicken is cooking, seed your bell peppers and slice into strips. Add all veggies and the rest of the chicken seasoning. Cover and simmer over medium-low heat for 20 minutes. Cook rice according to package. Serve over rice.(Make sure you get some of the evoo on your rice or it will taste dry).
