Chicken in sweet and hot pepper sauce

"If you don't like it hot, leave out the peppers and cayenne; I would think you end up with a nice sweet sauce but without "the kick". You can use parsley if you are not a basil fan."

Ready In:




  • Put the first 6 ingredients in your blender or food processor and process into a paste/pulp.
  • Heat the oil in a large frying pan or Dutch oven, when hot enough pour the pepper paste in and on a medium high heat fry for 10 minutes.
  • Add the milk and chicken stock.
  • Then add the chicken and stir, add the zucchini a few minutes later.
  • Bring to the boil, lower the heat, cover and simmer for 10- 15 minutes or until the chicken is tender.
  • In the meantime cook the pasta according package instructions, drain when cooked, and put in a large warm dish.
  • Check the seasoning of the chicken dish, If you find the sauce too thick you can add some more chicken stock, it depends how much moisture the zucchini will release, add half of the basil, mix and put half of the chicken on top of the pasta, mix, then pour over the remaining.
  • Sprinkle the rest of the basil on top together with the pine nuts.
  • Serve.

  1. Great flavor with a nice textured sauce. Next time I would omit the zucchini I did not find that it added anything to the flavpr. The basil & pine nuts sprinkled over the finished product is a nice touch Thanks whoever you are for a very tasty pasta dish

  3. This made a lovely Saturday night dinner. I haven't cooked with sweet red peppers before, so I enjoyed trying this, and I didn't use the jalapenos, since my daughters were eating at home, but another time I will try adding them, DH and I enjoy the spice. I used about 4 small zucchini (baby marrows), I always enjoy finding ways to use this cheap and plentiful vegetable. This was a good recipe, easily prepared, and that makes plenty.<br/>This recipe was prepared in loving memory of Annelies.
  4. This was a nice flavorful pasta dish! I used all 3 sweet red peppers and 2 red jalapenos and the heat factor was just right for us. I would have liked the sauce to be a little thicker and creamier, so I will probably add more milk or something to thicken it a bit next time. All in all we enjoyed this dish!

Well all right then ...... My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!! It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name. My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!! I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language! I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy) Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor.
