"From 101 Things to Do with a Cake Mix by Stephanie Ashcraft"

ingredients

• 1 lemon cake mix
• 1 egg
• 1⁄2 cup butter, melted
• 3 3⁄4 cups powdered sugar
• 2 eggs, beaten
• 8 ounces cream cheese, softened
• 1 teaspoon vanilla

directions

1. Preheat oven to 350 degrees.
2. Mix together cake mix, egg and butter. Spread into a greased 9 x 13-inch pan.
3. In a separate bowl, mix together powedered sugar, beaten eggs, softened cream cheese, and vanilla until smooth. Spread mixture over bottom layer.
4. Bake 30-40 minutes, until top layer turns a light golden brown.

Again, I love the fact it uses a cake mix. I buy them when they're on sale and stock up in our spare fridge. I made these for hubby's work and everybody raved! And it was so easy. Thanks. Made for Fall PAC 2011.
