I got this recipe out of the Fall Pampered Chef Season's Best cookbook. This is a super delicious and very easy pizza recipe. My only suggestion, would be to make sure you don't overcook the crust which I did my first time.
Preheat oven to 400F (200C). Lightly brush baking pan with oil. Unroll pizza crust onto pan and press to edges. Bake on lowest rack of oven 15-18 minutes or until top is golden brown.
Meanwhile, mix mayonnaise and mustard. Cut bell pepper and onion into small chunks. Process in food processor until coarsely chopped. Mix onion/bell pepper mixture, chicken, broccoli and mayonnaise/mustard mixture.
Grate cheese. Add half of the cheese to filling; mix well. Microwave chicken mixture, uncovered, on HIGH 2-3 minutes or until hot, stirring once halfway through cooking.
Remove pan from oven. Immediately sprinkle crust with remaining cheese.
Top crust with chicken mixture; spread to edges. Using a pizza cutter, cut into 16 squares. Serve.
