- 2 cups self-rising flour
- 1⁄2 cup shortening
- 1⁄2 cup shredded cheese
- 3⁄4 cup milk
directions
- Combine flour and shortening; cut in shortening with a pastry blender until mixute resembles coarse meal. Add cheese and milk, stirring until dry ingredients are moistened. Turn dough out onto a lightly floured surface , and knead lightly 4 or 5 times.
- Roll dough to 1/2" thickness and cut with a 2" biscuit cutter. Place on an ungreased baking sheet and bake in a preheated 450 degree oven for 10-12 minutes.
- BACON CHEESE BISCUITS: Increase the milk to 3/4 c plus 2 Tbps. Stir in 1/4 c chopped green onion and 3 to 4 strips of precooked, crumbled bacon into the biscuit dough as the milk is added. Makes about 18 biscuits.
- ZIPPY CHEESE BISCUITS: Increase the milk to 3/4 c plus 2 tablespoons Stir 1/2 c chopped pecans amd 1/4-1/2 tsp red pepper into biscuit dough as milk is added. Makes about 18 biscuits.

Now how much easier can it get ~ These biscuits came together in no time at all! I used a low-fat milk & mild cheddar! The 2 of us had these first with a cauliflower soup & mid-morning the next day with a chili (great both times) & they were gone in less than a 24-hour period! Will certainly make these again! I am a preschool teacher in Florida, here since marrying my hubby in Sept of '04. I have a stepdaughter. No kiddos of our own unless you count those with fur :-) We have 2 cats and 2 dogs who think they are cats.
