Cheddar Buttermilk Cornbread

- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1⁄4 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- pepper
- 2 cups grated extra-sharp cheddar cheese
- 1 1⁄2 cups buttermilk
- 2 large eggs
- 1⁄2 cup unsalted butter, melted, cooled slightly
- 1 cup corn
directions
- Preheat oven to 400°F Butter 8x8 baking dish.
- Sautee corn until lightly brown, set aside.
- Whisk first 7 ingredients in medium bowl to blend. Mix in cheese.
- Whisk buttermilk, eggs, and melted butter in another medium bowl to blend, then add corn.
- Add buttermilk mixture to dry ingredients and stir just until incorporated; do not overmix. Transfer batter to prepared pan.
- Bake until bread is golden on top and tester inserted into center comes out clean, about 20 minutes. Serve warm or at room temperature.
- (Can be made 1 day ahead. Cool completely in pan on rack. Cover with foil and store at room temperature.).

A wonderful high-rising cornbread - baked in an 8 x 11 inch pyrex pan! We added about 3 minced jalapenos (2 green & 1 red) & 2 chopped scallions - left out the cheese - opting to sprinkle it on our red hot pork chili (healthy dose of smoked chipotle pepper in there). This cornbread - sweet & light was the perfect foil for the dark rich chili bowl. Thanks for posting - she's a keeper!

<p>Hello all, being from California, I can honestly say I am a foodie. You can walk by construction workers here and hear them saying things like, So I used some fresh garlic and olive oil, then threw the rest into the pan to sautee. LOL I love all kinds of food, and trying to eat healthier as I get older, but still indulge in the occasional deep-fried food or sweet. <br />I LOVE this site! I have 3 or 4 other food sites such as Epicurious and Food Network, but I always come back here!
