Cauliflower baked with Tomatoes and Feta

  • Heat 2 Tbsp olive oil in a heavy based fry pan and saute the onion and garlic for 3-4 minutes, or until the onion has softened.
  • Add the tomatoes, cinnamon and oregano and season with the salt and pepper.
  • Stir then simmer covered for 5 minutes.
  • Preheat oven to 375F degrees.
  • Add cauliflower to the tomato mixture, cover and simmer for a further 10 minutes, or until cauliflower is just tender.
  • Remove from heat.
  • Transfer mixture to a large shallow dish and drizzle over the remaining 1 Tbsp olive oil.
  • Sprinkle over the lemon juice and crumbled feta.
  • Bake for 40 minutes or until the cauli is soft and cheese has melted.

  1. Thanks for a great recipe Eve. I love the combination of the flavours in the sauce over the cauliflower. I also loved the fetta cheese to finish. We made this with canned tomatoes, which worked well. Make sure the cauli is just tender before you put it in the oven dish-it took longer than 10 minutes for me as there isn't a real lot of liquid to cook it in at stage 5. We ate this with roast lamb etc. last night.
     
  2. This is a wonderful dish, especially for the summertime. My tomatoes are so fresh (not the fake ones from the supermarket) and so juicy. We liked all the flavors together, and the feta was a great finishing touch. Thanks for sharing this great dish with us.
     
  3. This is absolutely wonderful! I chose it because I am doing Phase I of the South Beach Diet. The flavors were amazing, and it was satisfying and filling. The fresh tomatoes, feta cheese and the pinch of cinnamon combined with the cauliflower for a truly tasty dish. I was surprised at how much it made, and thought it would last a few days. But my boyfriend loved it so much he just about ate it all up; he actually suggested that I double the recipe the next time! The next time I make it I will get a picture to post on this site. Very yummy!
     
  4. Since cauliflower is the ingredient of the month here at Recipezaar, I went looking for a good recipe. I found it! This is awesome! I used Roma tomatoes and they worked very well. The feta cheese melting on top was so good! I will definitely make this one a lot. Thanks Evie!
     
  5. I decided to roast this from this start instead of using the stove, and it was really delicious. I used only a half tablespoon of oil, half the cheese and fresh oregano, since we have it in our garden. Served two.
