ingredients
- 3 cups cooked couscous
- 2 cups tomatoes, diced
- 2 cups cucumbers, diced
- 1 cup green onion, chopped
- 2 cups cooked garbanzo beans
- 1⁄2 teaspoon black pepper
- 1 cup kalamata olive, halved
- 1⁄2 cup olive oil
- 3⁄4 cup lemon juice
- 4 garlic cloves, mnced
- 1 teaspoon salt
- chopped of fresh mint, to taste
directions
- Combine all ingredients and refrigerate until serving.

Made for Spring PAC 2013 - I made 1/4 of this recipe for the 2 of us plus a dinner guest & it still seemed like a lot, so it would be ideal for a crowd --- A family gathering, picnic, patio party, pot luck, etc. It is also sure to be a crowd-pleaser, has the advantage of being 1 of those recipes that is better made a day ahead & easily adapts to pers pref. I mostly eye-balled the ingredient amts & admit to being heavy-handed w/the garlic for me & black olives for my DH. We liked it a lot for all of these reasons. Thx for sharing this recipe w/us.
