Carrie's Banana Cake

"This cake was brought to a luncheon by a coworker. It was delicious. Since then, I have been making it, people love it and it is a great, easy way to use up those overripe bananas that sneak up on you."

  • Preheat oven to 350 degrees.
  • Mix cake ingredients in blender.
  • Pour into a greased 9x13" cake pan.
  • Bake for 25-35 minutes.
  • Allow cake to cool completely.
  • Mix Cool Whip, pudding mix, and milk.
  • Spread on top of cooled cake.

  2. I just made the cake portion of this recipe because I didn't have the ingredients on hand to make the frosting. I used a buttercream frosting instead. I made 21 cupcakes instead of the cake and they were very light and so delicious! Added about 3/4 cup of chopped pecans. Great shortcut recipe - so easy! Thanks for posting!
     
  3. This is the best banana cake I have ever had. I made this last night and could not believe how good it was. I put it in the refrigerator after I frosted it, (the theory being both pudding and cool whip are refrigerated). At lunch today my DH had a piece and fell for it hard. He is a chocolate man and he proclaimed it his favorite cake EVER! It deserves more than 5 stars for taste, ease of preparation and simplicity of ingredients!

  5. The frosting was gritty and runny. I used a handmixer. Ingredients was too heavy for my blender. Small tub of cool whip I found after researching is 8 ounces. Can the instructions be edited to be more specific for cooking dummies like me?

  1. I made this cake for a potluck and everybody said it tasted like "MORE". I gave the recipe to a friend who substituted a can of pumpkin for the bananas and used instant cheesecake pudding mix in the frosting. She said it turned out great and her boys loved it. I'll have to try that too.
     
  2. This was really good. I used instant chocolate pudding instead of vanilla which really tasted good with the banana. I made it SuperBowl Sunday and we had all the parents over. They all loved it. I think I will make this for my hubby's birthday since he loved it. My 4-year-old also loved it, and he normally is a "frosting only" kid. Very very good!
     
  3. Carrie....Thank you for a great recipe. We decided to have a barbeque at the last minute and I needed a quick dessert. This dessert was quick, easy and everyone loved it.I substituted a package of dream whip for the coolwhip and I used the handmixer, rather than the blender to mix all the ingredients. Thanks again for a winner
     
  4. This recipe make the moistest cake I have ever made. The only changes I made were: I didn't have any oil in the house so I used 1/3 cup of unsweetened applesauce in place of it and I put a cream cheese frosting on it. Pure Heaven. My DH thanks you so much for this recipe... he loves it so much he won't share.

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
