  • Slice onion thin; separate into rings.

  • Saute onion in oil 1 to 2 minutes.
  • Toss in cauliflower and carrots.
  • Add a bit of water; cover and steam vegetables about 15 minutes, stirring occasionally.
  • Toss with parsley and pumpkin seeds.
  • Serve hot.
