- 1 tablespoon vegetable oil
- 2 cups cauliflower florets
- 1 tablespoon fresh parsley, minced
- 1 medium onion
- 2 medium carrots
- 1⁄4 cup pumpkin seeds, hulled
directions
- Slice onion thin; separate into rings.
- Peel carrots and slice diagonally.
- Saute onion in oil 1 to 2 minutes.
- Toss in cauliflower and carrots.
- Add a bit of water; cover and steam vegetables about 15 minutes, stirring occasionally.
- Toss with parsley and pumpkin seeds.
- Serve hot.
