Broiled Bean Sandwiches

- 2 French rolls
- 1⁄2 cup refried beans
- 1⁄4 cup shredded cheddar cheese (1 ounce)
directions
- Set oven control to broil. Cut rolls horizontally in half. Broil cut sides up 2 to 3 inches from heat about 1 minute or until golden brown.
- Spread each roll half with 2 tablespoons beans. Sprinkle each with 1 tablespoon cheese.
- Broil with tops 2 to 3 inches from heat about 1 1/2 minutes or until cheese is melted.
- Enjoy.

I thought that I would try this with a little bit of refried bean mixture left over from some enchiladas - used a taco blend of shredded cheese - THIS IS GOOD!! My supermarket had a large loaf of french bread for $2 this week - I bought another can of no fat organic refried beans (on sale for $1) so I could do more of these:))) One eighth of the french bread with this and a salad are a GREAT lunch!! This is like a Mexican french bread pizza!!! Thanks for posting and helping my limping budget along - dgpat

I loved this! After I made it according to directions, that is. I first tried to get by using a wheat bun. It was okay but lacked the density that the french bread gives. I used an artisian french roll and extra sharp cheddar and this was the bomb! Will definetly be having this again! Thank you Ashhhhhaaaaaa!
