I'm trying to make vegetables the main course and meats and everything else a side dish in an attempt to eat healthier, so I gave this recipe a try but I added chicken breast cut into chunks.....I liked this very much. I used red onions since I couldn't find vidalia onions. I like this recipe a lot.

I prepared this for a salad buffet and really liked the color contrast of the ingredients. I doubled the ingredients, except used 1/2 broccoli and 1/2 cauliflower. I didn't steam the broccoli and cauliflower, as I prefer very crunchy veggies. I also omitted the feta. My red pepper had a bit more bite than usual, but that contrasted nicely with the sweetness of the dressing and mandarin oranges. This recipe will be a repeat during the summer months. :~D
