Blueberry Iced Tea

- 4 darljling tea bags, darljling
- 1 cup boiling water, boiling
- 1⁄2 cup wildflower orange blossom honey
- 1⁄4 cup fresh mint leaves, crushed, packed, fresh
- 1 1⁄4 cups pure blueberry juice, blueberry, pure
- 1⁄2 cup sweet pineapple juice, pineapple, sweet
- 1⁄8 cup fresh lime juice, lime, fresh, squeezed
- ice cube
- 1 1⁄2 quarts club soda or 1 1/2 quarts ginger ale
- 6 mint sprigs, garnish
- 6 lime slices, thin
directions
- To make the tea concentrate you will place the tea bags in a medium bowl into which you will add the boiling water and steep for 10 minutes, then reemove the tea bags.
- To the tea add your honey and mint, making sure to mix well. Allow to cool to room temperature on the counter. Once cooled remove the mint leaves.
- Add the fruit juices and tea concentrate into a large pitcher, mix and place in the fridge until needed.
- Fill a large frosted glass with ice cubes, then add 1/2 cup of the tea-juice mixture, fill the remainder of the glass with the club soda. Garnish with a lime slice and sprig of mint.
- Sit and enjoy this refreshing drink.

Thought I'd have a hard time finding the blueberry juice, but didn't, & this recipe went together in no time at all! I did use club soda, but opted out of the garnishes this 1st time around! Loved the combo of juice flavors very much! Thanks for a wonderful tasting tea & a recipe that will be staying with me from now on! [Tagged, made & reviewed in Newest Zaar Tag]

I made some of this tonight. I omitted the club soda (okay, so I forgot to pick some up). I used fresh fruit mashed and warmed on the stove with just a little water to make juice and then mixed it with the honey. I then steeped the mint leaves in the mix for about 10 minutes while waiting for the tea to brew. I used 1 more tea bag than called for -- I like my tea strong. The drink was pretty weak tonight but I hope some time in the fridge will allow the flavor to strengthen. On a side note: The fruit, honey and mint mix by itself was yummy!
