ingredients
- 1 pint fresh blueberries
- 2 cups Bisquick baking mix (heart smart)
- 1 cup whole wheat flour
- 1⁄2 cup sugar or 1/2 cup Splenda sugar substitute
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 cup milk (I use 1%)
- 1 eggs (equivalent of one egg) or 1 Egg Beaters egg substitute (equivalent of one egg)
directions
- preheat oven to 350.
- mix all dry ingredients.
- mix all wet ingredients.
- fold in the blueberries.
- pour into a bundt cake pan.
- bake at 350 for 50-60 minutes.

I made this with a homemade bisquick mix. I used skim milk and went up to a whole cup of sugar. I baked it in a rectangular pan and then added a lemon glaze because the finished product was quite dry. We really enjoyed the cake, but I don't think 1/2 cup sugar would have been nearly enough. It needed the sweetness of the glaze even with using a whole cup.
