ingredients
- 2 cups frozen blueberries
- 1 cup pineapple juice
- 1 cup plain soy yogurt
- 2 tablespoons raw almonds
- 1⁄4 teaspoon almond extract
- 1 teaspoon stevia powder (optional)
directions
- Combine everything in a blender and blend at high speed until very smooth and creamy.

After a full morning of making PAC recipes, I needed a quick and healthy Pick-Me-Up. This was one of my chosen recipes and it did the trick! Loved the combination of blueberries with pineapple juice; the hint of almond was a nice addition. I enjoy my smoothies slightly thinner so I added one more cup of pineapple juice to the mix. Made for Spring PAC 2010.
