- 2 (1 lb) cans black beans
- 1 (1 lb) can corn
- 1 (14 ounce) can crushed tomatoes
- 1 small green pepper, chopped
- 1 small red pepper, chopped
- 2 green onions, chopped
- 2 tablespoons cilantro
- 1⁄2 teaspoon basil
- 1⁄2 teaspoon oregano
- 1 1⁄2 tablespoons olive oil
- 1 1⁄2 tablespoons balsamic vinegar
- pepper (to taste)
directions
- Drain beans and corn.
- Gently mix beans, corn, tomatoes, green pepper, red pepper, green onion, cilantro, basil, oregano and pepper.
- Whisk olive oil and balsamic vinegar, then pour over mixture.
- Refrigerate 2 to 6 hours. Serve cold.
