  • Cream cheese filling:

  • Combine the cream cheese, sugar and vanilla extract in the mixer bowl. Beat until smooth; set aside.
  • Banana and Walnut Topping:

  • Dry toast the walnuts in a small pot for 2 minutes. Carefully add syrup to nuts bring to a light boil, add half and half stir to combine. Add bananas. Keep warm over low flame.
  • French Toast:

  • In a wide dish, combine the milk, eggs, lemon zest, salt, and vanilla extract. Beat with a fork until well blended. Pour enough vegetable oil into a large skillet to cover by 1/8 inch. Dip the bread slices into the egg mixture, and moisten thoroughly on both sides. Add several bread slices to skillet and cook for 2 to 3 minutes on one side or until deep golden brown. Flip; continue cooking on other side until deep golden brown and slightly puffy throughout, 2 to 3 minutes. Transfer bread slices to paper towels to remove excess oil. Place in a warm oven while preparing remaining slices. Repeat with remaining bread slices, adding more oil if necessary. Cover half of the slices of toast with 1/4 of the Cream Cheese Filling. Place the remaining slices on top of the cream cheese-covered ones, forming sandwiches. Cut on an angle. Pour warm Banana Walnut topping over toast.

  1. We weren't really excited about this recipe. The cream cheese stuffing was lacking, may be add nuts or dried banana chips. Also felt that they were a little 'greasey', perhaps it would be better to assemble the sandwiches and saute! IMO french toast is not a recipe to try to make fat free, so since I was unable to find half-half down here I used full cream for the banana walnut topping. Directions were a little hard to follow too.
     
  2. Good recipe but tough to rate for me. I'd give it 4 stars for flavor but 3 for the making of the recipe. I would have liked to have seen more of a filling than just the cream cheese, as the cream cheese was just more of a spread for me, not really "stuffed" with anything. The bananas layered into the filling or maybe even the chocolate chip contest ingredient would have been a nice addition. The flavor of the topping was very good, although with keeping it warm on the stove my bananas got a little too mushy, but were still tasted good. I found it a little "busy" to make for a morning breakfast dish, and think it would have worked better as an oven baked french toast type casserole. All in all a good recipe, but if I were craving something like this for breakfast I would probably look for more of the casserole type of stuffed french toast. Looks extremely appealing and makes you want to dig in. Nice use of ingredients for the contest with good flavor. Good luck!
     
  3. Made this for RSC #15. Made as is. Like the toast flavor, like the topping, although I did not use fat free. I used regular heavy cream. I tried 1/2 the recipe as is and 1/2 with heavy cream and the heavy cream by far was better. I didn't enjoy the fat free for the sauce. Sorry. The cream cheese was ok being lower in fat because it was mixed with powdered sugar and vanilla My biggest concern was the frying. I tried it. But to me I would of rather had it just pan sauteed with butter. I kept tasting oil. I just didn't like the fried taste. But the sauce and filling and cinnamon bread was a great flavor. I just couldn't get past the frying. Sorry Kim
