  • Lightly beat egg.
  • Stir in sugar.
  • Stir in melted butter.
  • Stir in bananas.
  • Combine dry ingredients.
  • Stir into wet mixture until just combined.
  • Fill greased muffin cups 3/4 full.
  • Bake at 375F.
  • for 20-25 minutes or until tops spring back when lightly touched.

  3. These muffins were excellent. I had very ripe bananas that I had frozen so I would have them for later. I made the muffins exactly as the recipe said and they turned out great.

Tweaks

  1. These were easy, delicious and look great. I used 3/4 whole wheat flour 3/4 white flour. Since I didn't have white sugar I used powdered sugar instead. I used cupcake liners and they came off the liner nicely. These are a lovely addition to a brunch.
     
  2. Great Muffin recipe! I did make a few changes...reduced sugar to 1/2 cup...substituted applesauce for 1/2 the margarine...used whole wheat flour for 1/2 the white flour....they were still an excellent, light muffin with great flavor!
