Banana Cake

"This recipe has come form a collection of family recipes taken up by one of the local primary schools from 1986. It has some fantastic recipes, and this cake is no exception. It's very simple to make and not something you would have to shop for, except for maybe the bananas. It keeps my husband AND my son very quiet of an afternoon...."

directions

  • Pre-heat oven to 180 Celsius.
  • Grease and/or line 20cm round cake tin.
  • Cream butter and sugar.
  • Add eggs and mashed banana and vanilla essence, beat well.
  • Stir in hot water.
  • Add S.R. flour and mix thoroughly. You end up with a sticky, thick mixture.
  • Bake for 25-35 minutes. (I usually turn the oven off at about 30 mins, then leave cake in cooling oven for 5-10 mins).
  • Check with a wooden skewer through the centre of the cake. When it comes out clean, cake is done.

  1. This is a nicely flavored cake with a nice texture. I used half the butter and substituted pear sauce for the other half as well as a combination of Splenda/sugar. It was topped off with 1 cup of recipe #309777. Made for *PAC Spring 2009*

I LOVE to cook. My father has been a chef for the last 40 odd years from when he learnt to cook in the army. He taught my mother and then me to cook, and i am now getting my 3yr old son into it as well. He loves to sit on the bench each night and "help" me make dinner. I love creating new dishes of my own, just by using what i have in the cupboard and fridge, and i love people that appreciate really good food. My husband is not so much of a fussy eater, as he has just not experienced much in the way of culinary delights. i love it when i can make something new and a little more exotic that bolognaise and he likes it!! i love my family, they are everything to me, and it is BIG! I have 4 sisters, 3 brothers, 11 nieces and nephews, plus sister and brother-in-laws.
