- 2 1⁄2 lbs red potatoes, cooked and cubed
- 1⁄2 lb bacon, cooked and crumbled
- 2 cups cubed cheddar cheese
- 2 cups shredded sharp cheddar cheese
- 1 large onion, finely chopped
- 1 cup mayonnaise
- 1 cup sour cream
- 1 tablespoon minced chives
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
directions
- In large bowl combine potatoes and bacon.
- Mix together all other ingredients and toss gently with potatoes and bacon.
- Transfer to a greased 9x13 pan and bake, uncovered at 325 for 50-60 minutes, until bubbly and lightly browned.
