Baked Mash Potatoes With Pancetta

- 1 tablespoon butter, room temperature
- 4 lbs russet potatoes, peeled and cut into 1-inch pieces
- 1⁄2 cup butter, melted
- 1 cup whole milk, room temperature
- 1 1⁄2 cups mozzarella cheese, shredded
- 3⁄4 cup freshly grated parmesan cheese
- 8 ounces pancetta, diced, cooked and drained
- salt (to taste)
- fresh ground pepper (to taste)
- 1⁄4 cup fresh flat-leaf Italian parsley, chopped
- 2 tablespoons plain breadcrumbs
- 1⁄4 cup freshly grated parmesan cheese (topping)
directions
- Preheat oven to 400 degrees.
- Coat a 9x13x2 inch baking dish with the softened butter and set aside.
- Cook the potatoes in a large pot of boiling salted water until they are very tender (15 minutes). Drain. Return potatoes to the pot. Mash.the potatoes.
- Mix in melted butter and milk.
- Mix in mozzarella and 3/4 cup parmesan cheeses, and pancetta.
- Season with salt and pepper to taste.
- Add parsley.
- Transfer potatoes to prepared baking dish.
- Combine bread crumbs and remaining 1/4 cup of Parmesan cheese in a small bowl. Sprinkle over the mashed potatoes.
- Bake uncovered until golden brown (20 minutes).

Mahalo nui loa! <br /><br />My rating system: The first time I try a recipe, I follow the instructions as given; if I do a little tweaking, I keep that in mind when rating. It's not right to rate lower because of something I did or didn't do. <br />***** ... Excellent! Tasted great with/without tweaking. <br />**** ... Loved It! Tasted great with/without tweaking. <br />No stars ... May be an excellent recipe but I was unable to get it to work for me. May or may not try again later. We don't all have the same taste preferences. I've found recipes with lots of five stars that just didn't work for me and some with less that I thought were great. <br />Thank you All for sharing!</p>
