Baked Bananas

- 4 bananas
- 1 cup orange juice
- 1⁄2 cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon butter
directions
- Peel bananas, then cut in half length-wise.
- Butter bottom of baking dish, and add single layer of bananas, cutting bananas in half if necessary.
- Pour orange juice over bananas, adding enough to cover bananas half way up.
- Sprinkle with brown sugar and cinnamon.
- Bake at 375 degrees for 15-20 minutes.
- Optional: try using rum instead of orange juice, or use some of both.

Bananas and oranges make a surprisingly good combo. My personal preference is to avoid the cinnamon (though I like cinnamon), since the flavor might overwhelm the fruit. Also helps use up all the bananas that might go to waste when I take advantage of the local grocery sales ;-) Great recipe, thanks.
