Bacon-Wrapped Chicken

"I found this online at Taste of Home. I was looking for something that would kick up a chicken dinner a notch and my DH and I thought this fit the bill. The recipe calls for spreadable chive and onion cream cheese. I used a portion of a softened brick of cream cheese and added parsley and minced onion. I would recommend the spreadable one instead. Even softened - it still was hard to spread. Very tasty though!"

  • Flatten chicken to 1/2 inch thickness.
  • Spread 3 TBSP cream cheese over each chicken breast.
  • Sprinkle with salt if desired. Roll chicken breasts up.
  • Wrap each with bacon strip.
  • Place seam side down in a greased 13x9 inch baking pan. Bake uncovered, at 400 degrees for 35-40 minutes, or until juices run clear.
  • Broil 6 inches from the heat for 5 minutes or until bacon is crisp.

  2. I used a very low fat philadelphia cheese and mixed in a finely chopped spring onion and about 2 teaspoons of roasted garlic flesh (for a 1/2 recipe - feeding 3). My skinless breasts were 220 to 250 grams each which I slit and stuffed with the cream cheese mix and wrapped in the bacon (needed 1 1/2 slices per breast of middle cut bacon - with rind removed). Cooked for 55 minutes at 190/195 C fan forced oven and the chicken was cooked and the bacon crispy (no grilling or broiling required). Though when making again I think I would use regular Philadelphia cheese as the low fat was very sloppy and I think a firmer texture would cook better.   3. This was really good and so easy to make. I used spreadable cream cheese to which I added some finely chopped parsley and some dried onion flakes. This worked well as I couldn't source the chive and onion cream cheese. I served this with jacket baked potatoes and recipe#357544. Into my keepers file it goes. :) Made for Aus/NZ swap September 2009

Tweaks

  1. you can also dice up some jalapenos and use those instead of chives or green onions, you can even add some mushrooms as well. I make this often but im always adding something different so its not the same as last time. you can combine cream cheese, mozzarella, and cheddar so you have a 3 cheese kind of blend as well.
