Aunt Susan's Taco Soup

ingredients
- 1 (8 ounce) package ranch dressing mix
- 1 (8 ounce) package taco seasoning
- 1 - 1 1⁄2 lb ground beef
- 2 large onions
- 2 (14 1/2 ounce) cans kidney beans, drained
- 2 (14 1/2 ounce) cans corn, drained
- 2 (14 1/2 ounce) cans pinto beans, drained
- 14 1⁄2 ounces diced tomatoes, NOT DRAINED
directions
- Brown beef & onion in pan, drain grease.
- Mix all ingredients in crock-pot (including juice from tomatoes!).
- Cook on high for about an hour, or low for a couple of hours.
- It will produce more liquid as it cooks so it won't be dry when you eat it.
- We eat ours with Scoops corn chips & throw some shredded cheese on top. Delicious!

I cut the recipe in half as I am the only real soup eater in our house. I froze some for feature lunches too. I did use a full can of tomatoes, pack of ranch and taco seasoning. I think there were a bit too many onions in this. I like onions but thought there were too many. This was a nice taco soup. Made for Spring PAC 2010.

I'm a stay at home mom of 3; my hubby works over the road so whenever he comes home I like the idea of trying new recipes...notice I said "the idea" lol...haven't done it that much but hopefully I can start with some good ideas from here!
