Asian Spiced Chicken With Vanilla Apricot Sauce

"I got this recipe from McCormick. This recipe has a unique contrast of flavor, is healthy, uses ingredients that most people have on hand, and is so good! I have altered it a little from the original. I like to serve over rice with crunchy wonton strips on top (original recipe used wonton cups, no rice & served as an appetizer). I double the sauce when I make it because it's that good! I don't know of many asian resaurants that make a dish this great!"

  • Combine chicken cubes, onion, soy sauce, lemon juice, olive oil, and spices in medium bowl. Cover and marinate in refrigerator for 15 minutes.
  • Heat large skillet over medium-high heat. Add chicken mixture with marinade and cook 7-10 minutes or until chicken is done. Stir in spinach and cook 1 minute. Drain liquid from pan. Serve over rice.
  • To prepare vanilla sauce, combine all ingredients in a small bowl and microwave for 25 seconds or until warm. Serve sauce on side, or pour over chicken mixture.

  1. This is absolutely wonderful! I wouldn't have come up with this combination of spices and flavors but it really works. Made a quick weekday meal that was very popular with my entire family. Uses ingredients on hand which is so convenient, too. Spinach cooks down very quickly so instead of chopping, I just threw in a handful of baby spinach. Thanks for sharing the recipe. I'll fix this again! Made for PAC Fall 2007.
     
  2. We thought this was mediocre and won't be making it again. I also wouldn't necessarily call it "healthy". It is low fat, but the sauce is almost completely sugar, between the jam and the orange juice. One serving has 1/2 of my daily caloric intake.

  4. delicious! this was great! did not change anything.. even hubby loved it, he usually will not touch anything with spinach but finished his plate of this.. thank you so much for sharing this. I think I will double it and cook it for company. (addition) >> I mixed up the spices and sent it home along with the recipe to a friend of mine, she had a date comming to dinner and didnt know what to make for him.... they both loved it, she was quite thankfull! thanks again!

  1. Exquisite! This was delicious and very easy to make! If you like sweet and sour asian food you'll love this! I used a little less oil for weight control reasons (30% less), I tore the spinach into 3/4 of an inch pieces, I also substituted the pumpkin pie spice for the same quantity of Garam Masala. The rest of the recipe I followed to a "T". Highly recommended!

My husband and I have owned our own business for almost 10 years and have a flexible schedule which I love! The most important thing to me right now is my family - I couldn't be happier to be a Mom! I don't want to miss out on a thing! I love to cook. I know it's nerdy, but I am a huge interest in food storage, canning, and emergency prepardness (don't make fun). Give me a wheat grinder and I'm in heaven! I also love photography, everything about the outdoors, sewing, playing cards, and playing with my girls.
