- 1 (15 ounce) can apricot halves, undrained
- 1 -2 tablespoon sugar
- 1 tablespoon lemon juice
- Freeze the apricots in a freezer-proof container. Place frozen apricots in a blender or food processor. Add sugar and lemon juice. Cover and process until combined. Serve immediately or freeze.

I doubled the recipe as my container of apricots was 1K, I froze them in a plastic container and once frozen I chopped it up so I could fit it into the food processor and added the sugar and lemon juice but after several minutes of trying to process it I took half of it out and it processed without difficulty to a lovely creamy smooth texture. I served it with recipe #466271 466271 for a guilt free dessert that we all enjoyed. Thank you Nancy's Pantry, made for Everyday A Holiday tag game.
