Apple and Spice Bread Pudding

- 4 eggs
- 3 cups day-old whole wheat bread cubes
- 2 tablespoons butter or 2 tablespoons margarine
- 2 medium apples, cored and chopped
- 2 cups milk
- 1 tsap. vanilla extract
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 cup raisins
- 1⁄3 cup packed brown sugar
- 1⁄4 teaspoon ground nutmeg
- cooking spray

CINNAMON SAUCE
- 1 cup corn syrup
- 1⁄2 teaspoon ground cinnamon
directions
- Spray a shallow 1 1/2 quart baking dish with cookin spray. In a dish, combine apples, bread cubes and raisins.
- In a medium bowl, beat together eggs, milk, brown sugar, vanilla, cinnamon and nutmeg until sugar is dissolved. Pour over apple mixture. Cover and refrigerate several hours or overnight.
- Preheat oven to 350°F Bake pudding until knife inserted in center comes out clean, about 45-55 minutes. Serve hot, warm or chilled.
- CINNAMON SAUCE: In glass bowl or measuring cup, stir together corn syrup and cinnamon. Microwave on high 1 minute; pour over pudding.

This was a really yummy use of the whole wheat bread that I had made last week. I used granny smith apples and they gave it a great flavor. Letting the mixture sit overnight really let the liquid absorb into the bread cubes since they were dense and was worth the extra wait. The pudding itself isn't overly sweet, so I made my own cinnamon topping that was similar to what you would put on a cinnamon roll (butter, milk, vanilla, cinnamon and powdered sugar) instead of the corn syrup mixture to give it a sweet dessert flavor. I will definitely make this again!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
