Apple and Cinnamon Muffins (Vegan)

ingredients

Wet mix in a large bowl
- 1 cup unsweetened applesauce
- 1⁄2 cup raw sugar
- 1 teaspoon vanilla

Dry Mix
- 1 cup spelt flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄2 cup walnuts, chopped
directions
- combine the wet ingredients. Combine the dry ingredients and sift into the wet mix. Add walnuts. Mix gently but thoroughly.
- Spoon into 5 muffin cases and bake for 20 minutes.

I'm eager to see how these turn out. I used spelt, but for the half cup of flour I used almond meal/flour that I ground up in my coffee grinder that I never use for coffee :) I also had some fresh pumpkin puree left over so I did 1 cup of apple sauce and 1 1/2 cups of pumpkin. I used walnuts and pecans. I also added blueberries. I used 2/3 cup of raw honey instead of sugar. I sprinkled the top with a little bit of raw sugar though. I'll let you know how it turns out! Ok guys, I made them, and thye were a hit! These are delicious!!! Thank you, thank you, thank you!

These were quite delicious ~ I used 1/2 spelt and 1/4 almond flour, and 1/4 WW pastry flour, added some flaxseed meal and used pecans instead of walnuts (personal preference). No oven temp was given so I used 350F, used mini-muffin tins and baked about 12 minutes. Perfect little snacks. Thanks canthelpmyself ~ made for PAC Spring 2009!
