- 6 flour tortillas
- 1 cup cheddar cheese, grated
- 1 tablespoon banana pepper, chopped
- 1 large red bell pepper, chopped
- 8 ounces cream cheese, softened
directions
- Mix cream cheese and peppers in a small bowl.
- Spread tortillas with cream cheese mixture.
- Sprinkle each wrap with grated cheese.
- Fold two sides of burrito wrap inward on ingredients, then roll from the bottom to make a pinwheel shape.
- Cut each wrap on a diagonal to make 4 - 5 pieces.
- Place on greased pan and cook at 350F until lightly browned.

These were scrumptious. I used the large tortillas, because that is what I had on hand. They didn't turn our very pretty, but were gobbled up just the same. Used double the amount of banana peppers! Went very well with a bowl of soup for lunch. The only note I feel wasn't addressed was warming the tortillas before trying to roll them! Also, I think next time I will spread the cream cheese and then sprinkle the peppers and the cheese. Thnx for sharing this recipe, mydesigirl. Made for PAC Fall 2009.
