Ancho Chili and Lime Marinade

- 1⁄4 cup lime juice
- 1 teaspoon chopped lime zest
- 1 tablespoon orange juice concentrate
- 1 tablespoon chopped cilantro
- 1 garlic clove, minced
- 1 tablespoon dried ancho chile powder
- 1 teaspoon dried Mexican oregano, crushed between fingers
- 1⁄4 teaspoon cayenne (to taste)
- 1⁄4 cup vegetable oil
directions
- In a medium bowl, combine all ingredients except oil; stir well.
- Slowly add oil while whisking to emulsify.

This marinade is really easy to make and the orange and lime juice are a great way to tenderize meats, not to mention, they add a wonderful tangy flavor. We love ancho chili powder because it adds such great depth of flavor, but not much heat. Made this last night and I have some skirt steak marinating in the refrigerator.
