Chili
- 3 lbs ground beef (80% lean)
- 2 large onions, chopped
- 1⁄2 cup chili powder, plus
- 2 tablespoons chili powder
- 1 1⁄2 tablespoons crushed red pepper flakes
- 1⁄4 teaspoon cayenne pepper (or to taste)
- 1 (6 ounce) can tomato paste
- 2 (15 ounce) cans tomato sauce
- 2 (15 ounce) cans beef broth
- 1 cup plain yellow mustard
- 1 large onion, chopped

Assembly
- hot dog, split almost in half and grilled
- hot dog bun, toasted
- plain yellow mustard
- grated cheddar cheese
- chopped onion
directions
- In a large pot, brown the ground beef and the two chopped onions, stirring frequently to ensure the beef is broken up; drain.
- Add the remaining chili ingredients except the remaining chopped onion, mixing well.
- Simmer over low heat for 1 hour and 45 minutes, stirring frequently.
- Add remaining onion to the sauce and simmer an additional 15 minutes, stirring occasionally (chili freezes well for up to 3 months).
- Assembly--place grilled hot dogs in toasted buns and top with mustard, chili, cheese, and onion.
- Serve immediately.

Not even close, as a young child I would get Doghead hot dogs in Wilmington, DE in a little hole in the wall cafe on Orange St. There was always a line for them. The sauce was a light creamy yellow, brown color and we always got them with everything, This recipe is way to spicy. The texture was all wrong and WAY WAY to hot with seasoning.
