  • Whisk together flour, baking powder, sugar, and salt is small bowl.
  • In separate bowl, mix together Almond milk, oil, vanilla and eggs.
  • Add flour mixture to egg mixture and stir to just moisten. A few lumps are fine.
  • Cook on a griddle over medium heat. They will be light in color.
  • Serve with butter and syrup.

  1. I had already started mixing my dry ingredients, when I discovered that I was out of almond milk, so I substitued coconut milk. OMG these were the best pancakes ever!!!
     
  2. I made this recipe and substituted Farro and almond flour that I blended myself from the whole Farro grain and almonds. I also used honey instead of sugar in the batter. I did not use the baking powder. I also added cinnamon and nutmeg to the batter. The consistency and taste was great for such a healthy pancake. I also used blueberries and honey with a pinch of hot water as a syrup replacement.
     
  3. These pancakes are amazing. My daughter and I made them today and wow! Fluffy and flavorful. We used unsweetened almond milk/vanilla flavor and 1 cup organic flour with one cup whole wheat flour. She wanted chocolate chips so mixed in and she loved them.
     
  4. I never keep real milk in the house, and so I always sub almond or cashew milk in my pancake recipes and they’re always a little “off”. This recipe was great and the pancakes were very fluffy.

Tweaks

  1. 1 cup whole wheat and 1 cup unbleached organic flour. Used unsweetened almond/vanilla milk
     
  2. Used coconut oil instead of canola oil and put fresh organic blueberries in the batter. Soo delicious!!!
     
  3. My tweak was a mistake. I meant to make a 1/2 batch, then a favorite song came on, and I started making a full batch. Had to add cup of flour, 2 tsp powder, and 1/2tsp salt. Still worked out great. I always have 2 eggs with my pancakes
     
  4. I added nutella, and fruit inside the pancakes. :)
     
  5. Halved the recipe, omitted the vanilla, a bit more sugar, substituted all purpose flour for stoneground whole wheat.
