- 1 cup sugar
- 1⁄2 cup oil
- 2 eggs
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 2 cups all-purpose flour
- 1⁄2 cup dark corn syrup
- 1 cup pecans (Chopped)
- 9 ounces mincemeat
directions
- Cream sugar, eggs, and oil. Add milk alternately with flour which has been mixed with soda and salt. Add syrup, pecans and mincemeat. Bake in bundt pan at 350 degrees for about an 1 hour or until an inserted toothpick comes out clean.

Well dear AuntSana beat me in reviewing this wonderfully tasty cake, but then I do love mincemeat & around here it's never a left-over, but rather a staple since I buy enough during the winter holidays to last me throughout the year (now that I've pretty much stopped making my own)! This is the kind of cake that one can/should enjoy any time of year! Thanks so much for posting this great recipe keeper! As Chef #424680 can attest, we both love our mincemeat! This definitely tasted like something from my childhood. My Mother always used those 9 oz blocks of dried mincemeat to make her pies. I think she would have loved this cake. I always have a couple of blocks in my pantry. To better blend that block of mincemeat (if that is what you are using), put it through your food process with some of the flour. It stops it from clumping up. The buttermilk is a fantabulous addition to the cake. Will definitely be making this again, Rita. Thnx for sharing the recipe. Made for PAC Spring 2010.
