Zuppa My Weight Watcher Version of the Olive Garden Soup

"This is the way that I have made a low fat version of the Zuppa. I hope you enjoy it like my family does. Feel free to add more Red pepper flakes and pepper especially if you want more of a bite. this is not a very spicey soup. So you might want to Dr. it up a little. I do if my youngest isn't eating the soup or else we do to our own bowls. 7 oz of potatoes = 3 pts Weight Watchers = 36 pts about 14 cups = 3 points per cup ** Preparation and cooking time are a guess Sorry haven't timed it when I have cooked it.. ******* Note USE Fat Free Evap milk or 2% for creamer flavor and high fat if you don't mind the calories. -- Last Time I made this with Fat Free Evap Milk enjoyed it much better. *****"

  • In a big soup pot.
  • Cook ground turkey with 1/2 tsp black pepper, ground sage, poultry seasoning, garlic powder, onion salt, red pepper flakes, and salt.
  • Add water, broth, potatoes, garlic, 1 tbsp pepper, chopped onion till potatoes getting tender.
  • Add the skim milk, and kale.
  • ******** DO NOT BOIL with the kale and milk it can curdle if you do just cook at a low simmer.
  • Simmer till kale is tender.
  • Add more pepper if needed.

  2. This soup is just yummy.. I use FF evaporated milk and left out the red pepper flakes. I really enjoyed this and will for the next few days. Thanks for a nice WW recipe
     
  3. this recipe is terrible!<br/>For one the last part of the recipe is not clear on what kind of pepper to add but I already added 1/2 teaspoon of pepper earlier in the recipe. Now you want me to add another Tablespoon of pepper??? also, I am tasting this and there is no flavor. it is very watery. <br/><br/>so sorry for the bad review but Thought I had to let you know what I experienced. Now I got to run to the store to go get more ingredients for a different recipe before My honey comes home....Aye Dios Mios!

<p>My love of cooking started when I was in grade school. My earliest memory was making a wonderful birthday cake from Scratch with my Grandmother in a big bright red bowl. I remember we had a lot of fun making it and eating the cake. <br /><br />I have a wonderful husband and 2 daughters 16yrs and 4yrs old. I have a Social Work degree and worked with mentally ill adults for several years. I really enjoyed my work in a group home. I currently am staying home with my youngest and am not sure what I will do when she goes to school.
