This was very good. I was looking for a recipe that didn't require milk and this worked. It used up some of those zucchinis that we have sitting around too. My dad really appreciated the flavor. I used whole wheat flour instead of plain flour. It made it rich tasting and healthy, but took longer to bake.

  1. Mix all together and pour in muffin tins.
  2. Bake at 350 degrees for 15-20 minutes.
