Zucchini Fruit Square

"This is a recipe I have had for about twenty years and filed it away and just came across it again today. I made it just to refresh my memory and it is very good. I got this recipe from an old relative."

• Yields: 1 slice
• Serves: 24-32

ingredients

• 1 cup grated zucchini
• 3⁄4 cup margarine, softened
• 1⁄2 cup white sugar
• 1⁄2 cup brown sugar
• 2 eggs
• 1 teaspoon vanilla
• 1 3⁄4 cups flour
• 1⁄2 teaspoon baking powder
• 1⁄2 teaspoon salt
• 3⁄4 cup raisins
• 1⁄2 lb mixed fruit

• Icing

• 4 ounces cream cheese
• 1 1⁄2 cups icing sugar
• 2 tablespoons butter
• 1 teaspoon vanilla

directions

1. Cream margarine and sugars.
2. Add eggs and vanilla and beat.
3. Mix fruit and raisins with dry ingredients.
4. Add dry ingredients and zucchini to creamed mixture.
5. Grease a jelly roll pan, 15 1/2" x 10 1/2".
6. Bake at 350° for 25 to 30 minutes.
7. Ice when cool.
8. Icing; Beat cream cheese, icing sugar, butter and vanilla until light and fluffy.

This tastes like shortbread with fruit. The mixed fruit makes for a great looking slice. Served this for coffee and it was such a hit that I will be making this for a 'bake and take' this weekend. I expect to come home with an empty pan.
