This came from a friend of mine who brought them to work a few years ago. They are delish! I am guessing at amounts, as zucchini will differ in size.
- Mix all ingredients together and drop into.
- 1/2 inch of hot oil.
- Fry until brown.
- Drain on paper towels.
- You may have to add flour to mixture as you spoon, to make mixture stick.
- You can serve with tartar sauce, if desired.
This is the same as my recipe, except I grate the zucchini and the onion. They are very yummy. Try serving then wiht a roasted red pepper dip (you can buy it at Trader Joe's). Obviously also very good with a marinara sauce!
