This was my Mom's recipe. It's an easy recipe to make and so versatile. Just add whatever spices or herbs you like.

  • Mix all ingredients just until blended.
  • Heat enough oil in a pan to cover bottom.
  • Drop a spoonful of fritter batter into hot oil and cook until golden brown and crisp.
  • Remove from oil and drain on paper towels.
  • Sprinkle lightly with salt.

    We really enjoyed this recipe. It was very quick and easy to make and the fritters were enjoyed by everyone. It was a great use for extra zucchini.

    Wow! Thank you for this wonderful recipe! I made a few modifications: 1. I had no onions so left them out and added extra garlic powder - still great - next time may try fresh thyme, too. 2. I don't fry much so I sprayed a lasagna pan with Pam, made pancakes and set them in the pan, sprayed the tops and baked at 425. I did the first side 10 min, flipped and cooked an additional 15 minutes. My husband and daughter and I all loved them and my husband insisted I review this. :)

    Very good fritters. I used red onion and added 2 gloves of garlic. This recipe makes a lot of batter and I opted to make larger fritters and got 10 of them, so we had enough for two people with leftovers for another meal.

    These were very good. We ate these as an appetizer one evening, and as a side dish another night. The leftover batter refrigerated well, and the fritters made several days later were just as good as the first batch. DH dipped his into ranch dressing; I enjoyed mine plain.

    The only thing I did differently was use instant potato flakes as I had some in my cupboard to use up, instead of Bisquick.They are really good, and the cheese and onion flavor makes all the difference. They are very good with some ketchup!
