ingredients
- 2 eggs
- 1⁄2 cup vegetable oil
- 3⁄4 cup sugar
- 1 cup zucchini
- 1 cup self-rising flour
- 1 teaspoon vanilla
- 1 1⁄2 teaspoons ground cinnamon
- 1⁄2 cup chopped nuts
directions
- Boil zucchini in water till done.
- Drain.
- Beat eggs, add sugar and oil.
- Combine all ingredients with zucchini.
- Pour into a greased standard loaf baking pan.
- Bake at 325 degrees for 55 minutes.
- Makes 1 loaf.
