Turmeric gives this rice side dish its vivid yellow hue.
- 1 tablespoon olive oil
- 1⁄2 cup chopped onion
- 1 cup long grain rice
- 2 teaspoons italian seasoning
- 1⁄2 teaspoon ground turmeric
- 2 cups chicken broth
- 1 cup frozen peas
- salt, as desired
- Heat oil in large skillet on medium heat. Add onion; cook and stir 3 minutes until softened. Add rice, Italian seasoning and turmeric; cook and stir 2 minutes.
- Stir in broth. Bring to boil. Reduce heat to low; cover and simmer 15 minutes. Stir in peas; cover. Cook 5 to 8 minutes or until rice is tender.
This was a hit with my picky eaters. I added a pound of ground turkey and served it as a main course.
This is a great change from plain old rice and so easy to make. The colour is wonderful, as is the flavour. I used a little more broth for softer, almost saucy, rice. Thank you, Jezebel
I made this when I wanted a colorful rice to go with chicken, and it did not disappoint. Very good flavor from the Italian seasoning and turmeric. The peas are a good addition; we really enjoyed this.
