I really enjoyed this. I used the peanut oil, and with the peanuts, found that this had a strong peanut flavor. Very colorful and delicious! Thanks for sharing.

  1. Combine chicken broth, hoisin sauce, sherry, and cornstarch in a small bowl; stir well, and set aside.
  2. Coat a large nonstick skillet with cooking spray; add peanut oil, and place over medium-high heat until hot.
  3. Add snow peas and bell pepper strips; saute' 3 minutes or until vegetables are crisp-tender.
  4. Add broth mixture, and cook 2 minutes or until mixture is thick, stirring constantly.
  5. Sprinkle with peanuts.
